Raw pizza dough is very delicate and might deteriorate quickly. Therefore, you have to plan ahead some few steps in order to maintain your pizza dough as fine as possible before you're going to use it for cooking:
- Whether your pizza dough is homemade or purchased ready-made from the supermarket, keep it wrapped in a plastic bag, in the coldest part of your refrigerator.
- if you're not willing to use your dough within a day or two of purchase, you have to put it in the freezer because unless you do, the yeast will ferment and it will ruin your dough. If you keep the dough in the freezer, however, the dough could last for a couple of months, but it's better to use it within 3 months of storage date.
- Before you start to roll the dough out, defrost it in the fridge and bring it to room temperature in order to let the dough relax.
