Pasta pesto recipe


  • 375g dried linguine pasta
  • 1 cup fresh basil leaves
  • 2 tablespoons pine nuts, toasted
  • 1 garlic clove, crushed
  • 2 tablespoons grated Parmesan cheese
  • 1/4 cup extra-virgin olive oil
  • Shaved Parmesan cheese, to serve
In a food processor, put the garlic, pine, basil and grated Parmesan all together.
Afterwards, add the olive oil slowly over the mixture until a creamy, heavy sauce is reached.
Add salt and pepper at the end.
Meanwhile fill in a skillet with water and let it boil adding 2 tablespoons of veggie oil over it.
Cook the linguini in the boiling water following the instructions mentioned on the packet.
Finally, drain the pasta, add over it the pesto sauce and serve with Parmesan cheese aside.
